
Hi everyone it’s that time of the year again. All the fancy deserts that you don’t eat all year long. Here is an Easy Sweet Potato Pie that anyone can make. When I was just a little girl, I would sit in the kitchen and watch my mom make them.
Now days, when it’s time for me to cook the holiday dinner that’s the first thing my two children say to me. How many pies you making this year mom? I normally make about five because one will disappearafter it comes out of the oven. When my husband was alive I would always catch him late at night with my son sitting on his lap and a whole pie and a quart of milk. Boy did he get in trouble. So let’s get cookin I think you’ll really like this pie.
Ingredients:
3 large sweet potatoes
1 stick unsalted butter
3/4 cup light brown sugar (packed)
1/2 cup granulated sugar
2 large eggs beaten
1/4 cup half and half milk
3/4 teaspoon ground cinnamon
1 teaspon ground nutmeg
You can cook the sweet potatoes two ways, boil them until done or put in the oven and cook until. Peel the skins off and use a potato masher to get most of the lumps out.
In a large mixing bowl, mix the butter, potatoes, brown suger, granulated suger and half and half until it’s well blended. Add the beaten eggs cinnamon and nutmeg continue to mix well. Pour into the prepared pie shells. Bake at 350 degrees for one hour, until the set. This make two pies.
