    Squeeze lime over chicken and rinse well.

    Blend tomato, scallion, garlic, onion, pepper, thyme, pimento and soy sauce in a big bowl with the chicken bits. Cover and simmer a minumum of one hour.

    Heat oil in a dutch kettle or large saucepan. Shake off the batter as you remove each piece of chicken in the marinade.

    Gently brown the chicken a few pieces at a time in very hot oil. Place browned chicken pieces on a plate to break while you brown the remaining pieces.

    Drain excess oil off and then return the chicken to the pan. Pour the marinade over the chicken and put in the carrots. Stir and cook over moderate heat for 10 minutes. Turn down heat to minimal and cook another 20 minutes or till tender.
