Cuban Chicken And Yellow Rice Recipe
Heat oil in a large deep skillet over med-high heat. Add chicken and brown on both sides till golden and nearly done. Remove to a plate, then sprinkle with pepper and salt and keep warm.
Pour water to skillet and add garlic. Bring to a boil and then add rice and stir. Add chicken back to pan on top of rice and bring to a boil. Cover and reduce heat. Cook until liquid is absorbed and rice is tender, about 20 minutes.
Spoon peas and roasted red pepper on top. Cover again and cook 3-5 more minutes.
