Method

    Bring a kettle of water to a boil and then add the chicken, together with the entire onion half, a complete (peeled) spoonful of garlic and salt to taste.

    While the chicken is cooking, warm the oil on moderate in a skillet and cook the sliced onion till translucent.

    Add the minced garlic and cook till golden.

    Add the spices and toast gently, being careful not to burn them.

    When the chicken remains cooking, place the tomato / onion mixture aside.

    Once the chicken is cooked through, cool to the touch and then shred.

    Add the chicken along with a little ladle of broth into the onion / onion mixture and simmer, stirring frequently, for 10 - 15 minutes or until excess liquid was consumed.

    Meanwhile, heat the tortillas over low to a comal or inside a skillet for about a minute per side.

    Once the chicken filling is prepared, check for seasoning and correct as required.

    Serve with your choice of hot sauce or salsas to additional groom the tacos for your personal liking.
